Ingredients

  • 1 cup Dried Fava Beans
  • 6 cups Water
  • 4 cloves Garlic
  • 3 tablespoons Lemon Juice
  • 2 tablespoons Olive Oil
  • 1 teaspoon Cumin
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Salt
  • 1/4 cup Fresh Parsley
  • 1 medium Diced Tomatoes
  • 2 tablespoons Tahini
  • to taste dashes Hot Sauce

Instructions

  1. 1Soak the fava beans in water overnight.
  2. 2Drain the fava beans and place them in a pot with 6 cups of fresh water.
  3. 3Bring to a boil, then reduce heat and simmer for 1.5-2 hours, or until the beans are very tender.
  4. 4Mash some of the beans to create a thicker consistency.
  5. 5In a separate pan, sauté the garlic in olive oil until fragrant.
  6. 6Add the garlic and olive oil mixture to the fava beans.
  7. 7Stir in the lemon juice, cumin, paprika, and salt.
  8. 8Simmer for another 5 minutes.
  9. 9Serve hot, garnished with fresh parsley, diced tomatoes, a drizzle of tahini, and hot sauce (optional).
