Lebanese Foul Mudammas (Stewed Fava Beans)

A traditional Lebanese breakfast of slow-cooked fava beans seasoned with lemon juice, garlic, and olive oil. Served with pita bread and fresh vegetables.

Ingredients

  • 1 cup Dried Fava Beans
  • 6 cups Water
  • 4 cloves Garlic
  • 0.25 cup Lemon Juice
  • 0.25 cup Olive Oil
  • 1 teaspoon Cumin
  • 0.5 teaspoon Salt
  • 0.25 cup Fresh Parsley
  • 1 cup Diced Tomatoes
  • 4 pieces Pita Bread

Instructions

  1. 1Rinse the fava beans and soak them in water overnight.
  2. 2Drain the fava beans and place them in a large pot with 6 cups of water.
  3. 3Bring to a boil, then reduce heat and simmer for 1-1.5 hours, or until the beans are very tender.
  4. 4Mash some of the beans with a fork to create a creamy texture.
  5. 5Stir in minced garlic, lemon juice, olive oil, cumin, and salt.
  6. 6Simmer for another 10 minutes.
  7. 7Garnish with fresh parsley and diced tomatoes.
  8. 8Serve hot with pita bread.
