Lebanese Foul Madamas (Dairy-Free)

Ingredients

  • 3 cans (15 oz each) Canned Fava Beans
  • 6 cloves Garlic
  • 3 tbsp Lemon Juice
  • 4 tbsp Olive Oil
  • 1 tsp Cumin
  • 1/2 tsp Paprika
  • 1/2 tsp Salt
  • 1/4 cup Fresh Parsley
  • 1/2 cup Chopped Tomatoes
  • 1/4 cup Chopped Red Onion

Instructions

  1. 1Open the 3 cans (15 oz each) of Canned Fava Beans. Pour them into a colander set over a sink. Drain the beans, then rinse them well under cool running water. Let them drain for at least 1 minute.
  2. 2Get a large heavy-bottomed pot. Add about half of the drained fava beans to the pot. Use a fork or a potato masher to mash these beans until they are mostly broken down, creating a creamier texture. This should take about 1 minute.
  3. 3Add the remaining whole fava beans to the pot with the mashed beans. Add the 6 cloves of Garlic, which have been minced. Add the 3 tbsp of Lemon Juice, the 4 tbsp of Olive Oil, the 1 tsp of Cumin, the 1/2 tsp of Paprika, and the 1/2 tsp of Salt.
  4. 4Measure and add 1/2 cup of water to the pot. Stir everything together to combine. Place the pot on the stove over medium heat. Bring the mixture to a gentle simmer, which is when small bubbles rise to the surface. This should take about 5-7 minutes.
  5. 5Once simmering, reduce the heat to low. This is the lowest setting on your stove. Cover the pot with a lid. Let the mixture simmer for 30 to 40 minutes. Stir the beans every 10 minutes to prevent sticking. The beans are ready when they are very tender and the liquid has thickened slightly. You will smell a rich, savory aroma.
  6. 6Carefully ladle the hot Foul Madamas into serving bowls. Sprinkle the top with the 1/4 cup of Fresh Parsley, the 1/2 cup of Chopped Tomatoes, and the 1/4 cup of Chopped Red Onion. If you like, you can drizzle a little extra olive oil over the top before serving.
