Ingredients

  • 2 pieces Pita bread
  • 6 cups Mixed greens
  • 1 medium Cucumber
  • 2 medium Tomato
  • 0.5 medium Red onion
  • 1 medium Bell pepper
  • 4 small Radishes
  • 0.25 cup Fresh mint
  • 0.25 cup Fresh parsley
  • 1 tbsp Sumac
  • 3 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 clove Garlic
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Instructions

  1. 1Preheat oven to 375°F (190°C). Cut pita bread into squares or strips and bake for 5-7 minutes, or until crispy.
  2. 2In a large bowl, combine mixed greens, chopped cucumber, tomato, red onion, bell pepper, radishes, mint, and parsley.
  3. 3In a small bowl, whisk together sumac, olive oil, lemon juice, minced garlic, salt, and pepper to make the dressing.
  4. 4Pour dressing over the salad and toss to combine. Add the crispy pita bread pieces just before serving to prevent them from getting soggy.
