Ingredients

  • 1 cup Dried Chickpeas
  • 1/2 medium Onion (chopped)
  • 1/2 cup Fresh Parsley (chopped)
  • 1/4 cup Fresh Cilantro (chopped)
  • 2 cloves Garlic (minced)
  • 1 teaspoon Cumin
  • 1/2 teaspoon Coriander
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 2 cups Vegetable Oil (for frying)
  • 1/4 cup Tahini
  • 2 tablespoons Lemon Juice
  • 1 clove Garlic (minced)
  • 2-3 tablespoons Water

Instructions

  1. 1Soak the dried chickpeas in water for at least 24 hours, changing the water a few times. Drain well.
  2. 2In a food processor, combine the soaked chickpeas, chopped onion, parsley, cilantro, minced garlic, cumin, coriander, baking powder, salt, and pepper.
  3. 3Process until finely ground but not completely smooth. The mixture should be slightly coarse.
  4. 4Shape the mixture into small balls or patties.
  5. 5Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  6. 6Fry the falafel bites in batches for 3-5 minutes, or until golden brown and crispy.
  7. 7Remove with a slotted spoon and drain on paper towels.
  8. 8To make the tahini sauce, whisk together the tahini, lemon juice, minced garlic, and water until smooth. Add more water if needed to reach desired consistency.
  9. 9Serve the falafel bites with tahini sauce.
