Lamington Bites

Miniature versions of the classic Australian lamington, perfect for a sweet snack. These bite-sized treats are coated in chocolate and coconut.

Ingredients

  • 1 package Sponge Cake
  • 2 cups Chocolate Icing
  • 2 cups Desiccated Coconut

Instructions

  1. 1Cut the 1 package of sponge cake into 1-inch cubes.
  2. 2Pour the 2 cups of chocolate icing into a shallow bowl. Place the 2 cups of desiccated coconut into a separate shallow bowl.
  3. 3Take one 1-inch sponge cake cube and fully dip it into the 2 cups of chocolate icing, ensuring all sides are completely covered.
  4. 4Immediately transfer the chocolate-coated cube to the 2 cups of desiccated coconut. Roll the cube until the desiccated coconut completely covers the chocolate icing. Repeat this process for all remaining sponge cake cubes.
  5. 5Place the finished lamington bites on a wire rack. Allow them to rest at room temperature for 10 minutes; this allows the chocolate icing to firm up slightly.
  6. 6Transfer the wire rack with the lamington bites to the refrigerator. Chill for 30 minutes to ensure the chocolate icing and coconut coating set completely before serving.
