Ingredients

  • 1 pound Ground Lamb

  • 4 cups Cauliflower, riced
  • 1 medium Tomato, diced
  • 1/2 medium Cucumber, diced
  • 1/4 medium Red Onion, finely chopped
  • 2 tablespoons Fresh Mint, chopped
  • 3 tablespoons Olive Oil
  • 3 tablespoons Lemon Juice
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1In a medium bowl, combine the 1 pound ground lamb, 1/2 medium onion (grated), 2 cloves garlic (minced), 1/4 cup fresh parsley (chopped), 1 teaspoon cumin, 1/2 teaspoon coriander, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix everything together with your hands until just combined.
  2. 2Divide the lamb mixture into 8 equal portions. Roll each portion into a small oblong shape, about 3 inches long. Thread two lamb shapes onto each of 4 skewers, leaving a small space between them.
  3. 3Preheat your grill to medium-high heat, which is about 400°F (200°C).
  4. 4Place the 4 skewers on the preheated grill. Cook for 5-7 minutes per side. The kofta should be cooked through, firm to the touch, and have a slightly charred exterior. The internal temperature should reach 160°F (71°C).
  5. 5While the kofta is grilling, prepare the cauliflower tabouli. In a large bowl, combine the 4 cups cauliflower (riced), 1 medium tomato (diced), 1/2 medium cucumber (diced), 1/4 medium red onion (finely chopped), and 2 tablespoons fresh mint (chopped).
  6. 6In a small bowl, whisk together the 3 tablespoons olive oil, 3 tablespoons lemon juice, 1/4 teaspoon salt, and 1/4 teaspoon black pepper until well combined to make the dressing.
  7. 7Pour the prepared dressing over the cauliflower mixture in the large bowl. Toss gently until all the ingredients are coated.
  8. 8Serve the 4 lamb kofta skewers immediately alongside the cauliflower tabouli.
