Lablabi (Tunisian Chickpea Soup)

Ingredients

  • 1 cup Dried chickpeas
  • 6 cups Water
  • 2 tbsp Olive oil
  • 6 cloves Garlic
  • 2 tsp Cumin
  • 1 tsp Harissa paste
  • 2 tbsp Lemon juice
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 4 slices Crusty bread

Instructions

  1. 1Soak chickpeas overnight in water. Drain and rinse.
  2. 2In a large pot, combine chickpeas with 6 cups of water. Bring to a boil, then reduce heat and simmer for 1-1.5 hours, or until chickpeas are tender.
  3. 3While chickpeas are cooking, heat olive oil in a small pan. Add minced garlic and cook until fragrant, about 1 minute. Stir in cumin and harissa paste and cook for another minute.
  4. 4Add the garlic-spice mixture to the chickpea soup. Stir in lemon juice, salt, and pepper.
  5. 5Serve hot with crusty bread.
