Kya Thauk (Burmese Porridge)

Ingredients

  • 1/2 cup Rice
  • 6 cups Water
  • 1/2 teaspoon Salt
  • 1 teaspoon Ginger
  • 2 tablespoons Crispy fried garlic
  • 2 tablespoons Chopped cilantro
  • 1 tablespoon Fish sauce

Instructions

  1. 1Rinse the 1/2 cup Rice thoroughly under cold running water until the water runs clear. Drain well.
  2. 2In a large heavy-bottomed pot, combine the rinsed 1/2 cup Rice, 6 cups Water, and 1/2 teaspoon Salt. Bring the mixture to a rolling boil over high heat. Once boiling, immediately reduce the heat to low, cover the pot, and let it simmer for 40 to 45 minutes, or until the rice is very soft and the porridge has thickened to your desired consistency.
  3. 3While the porridge simmers, stir it every 10 minutes to prevent the rice from sticking to the bottom of the pot. The porridge should be thick and creamy.
  4. 4Once the porridge is cooked, stir in the 1 teaspoon Ginger. Cook for 1 more minute, stirring constantly, until the ginger is fragrant.
  5. 5Ladle the hot porridge into serving bowls. Garnish each bowl with 2 tablespoons of Crispy fried garlic and 2 tablespoons of Chopped cilantro. Drizzle each serving with 1 tablespoon of Fish sauce just before serving.
