Kwati (Mixed Bean Soup)

A nutritious and hearty soup made with a variety of sprouted beans. This version is gluten-free and completely egg-free.

Ingredients

  • 2 cups Mixed sprouted beans (kidney, black, mung, etc.)
  • 1 medium Onion
  • 2 medium Tomato
  • 2 tbsp Ginger-garlic paste
  • 1 tsp Turmeric powder
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 3 tbsp Mustard oil
  • 2 Green chilies
  • 1.5 tsp Salt

Instructions

  1. 1Prepare beans: Soak mixed beans overnight. Sprout them for 1-2 days.
  2. 2Sauté spices: Heat mustard oil in a pot. Add ginger-garlic paste and sauté until golden brown. Add turmeric, cumin, and coriander powder, and sauté for another minute.
  3. 3Cook vegetables: Add chopped onion and sauté until translucent. Add chopped tomato and cook until softened.
  4. 4Simmer: Add sprouted beans and enough water to cover them. Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until beans are tender.
  5. 5Season and serve: Add salt and green chilies. Adjust seasoning to taste. Serve hot.
