Ingredients

  • 2 cups Kumara (sweet potato), grated
  • 1 cup Spinach, chopped
  • 2 large Eggs
  • 1/4 cup Gluten-free flour
  • 1/2 tsp Baking powder
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
  • 2 tbsp Olive oil
  • 2 medium Avocados
  • 1 tbsp Lemon juice
  • 1/4 cup Red onion, finely chopped
  • 2 tbsp Cilantro, chopped

Instructions

  1. 1In a large bowl, combine grated kumara, spinach, eggs, gluten-free flour, baking powder, salt, and pepper. Mix well.
  2. 2Heat olive oil in a large skillet over medium heat.
  3. 3Drop spoonfuls of the kumara mixture into the hot skillet, flattening slightly. Cook for 3-4 minutes per side, or until golden brown and cooked through.
  4. 4While the fritters are cooking, prepare the avocado smash. In a bowl, mash the avocados with lemon juice, red onion, and cilantro. Season with salt and pepper to taste.
  5. 5Serve the kumara and spinach fritters topped with the avocado smash.
