Ingredients

  • 2 cups Fresh Spinach
  • 1 cup Fresh Parsley
  • 1 cup Fresh Cilantro
  • 1/2 cup Green Onions
  • 1/4 cup All-Purpose Flour
  • 2 tablespoons Flaxseed Meal
  • 6 tablespoons Water
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Turmeric
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 2 tablespoons Olive Oil

Instructions

  1. 1Preheat oven to 375°F (190°C). Grease a mini muffin tin.
  2. 2In a small bowl, mix flaxseed meal with water. Let it sit for 5 minutes to thicken.
  3. 3Finely chop spinach, parsley, cilantro, and green onions.
  4. 4In a large bowl, combine the chopped herbs, flour, flaxseed mixture, baking powder, turmeric, salt, and pepper.
  5. 5Mix well until all ingredients are evenly distributed.
  6. 6Spoon the mixture into the prepared mini muffin tin.
  7. 7Drizzle olive oil over the top.
