Ingredients

  • 2 cups Glutinous rice
  • 1 cup Coconut milk
  • 0.5 tsp Salt
  • 2 leaves Pandan leaves
  • 2 cups Coconut milk
  • 2 large Eggs
  • 0.75 cup Sugar
  • 0.25 cup All-purpose flour
  • 1 tsp Pandan extract

Instructions

  1. 1Rinse the glutinous rice and soak for at least 2 hours.
  2. 2Drain the rice and steam with coconut milk, salt, and pandan leaves for 30 minutes.
  3. 3Press the rice firmly into a greased baking dish.
  4. 4For the custard layer: Whisk together coconut milk, eggs, sugar, and flour. Add pandan extract.
  5. 5Pour the custard mixture over the rice base and steam for another 20 minutes, or until the custard is set.
  6. 6Let cool completely before cutting into squares and serving.
