Ingredients

  • 2 cups Glutinous Rice
  • 1 can Full-Fat Coconut Milk
  • 1/2 teaspoon Salt
  • 5 Pandan Leaves
  • 1/2 cup Tapioca Starch
  • 1/4 cup Rice Flour
  • 2 tablespoons Mung Bean Flour
  • 1 cup Sugar
  • 1 teaspoon Vanilla Extract

Instructions

  1. 1Drain the soaked glutinous rice. Mix with half of the coconut milk and salt. Steam for 30 minutes, or until cooked.
  2. 2For the pandan layer: Extract pandan juice by blending pandan leaves with 1 cup of water and straining. In a bowl, whisk together pandan juice, tapioca starch, rice flour, mung bean flour, sugar, vanilla extract, and the remaining coconut milk until smooth.
  3. 3Pour the pandan mixture over the steamed glutinous rice. Steam for another 30 minutes, or until the pandan layer is set.
  4. 4Let cool completely before cutting into squares and serving.
