Ingredients

  • 2 cups Glutinous rice
  • 1 can Coconut milk
  • 1/2 tsp Salt
  • 2 leaves Pandan leaves
  • 1/2 cup All-purpose flour
  • 1 can Coconut milk
  • 2 large Eggs
  • 3/4 cup Sugar
  • 1 tsp Pandan extract
  • 2 drops Green food coloring (optional)

Instructions

  1. 1Soak glutinous rice in water for at least 4 hours or overnight. Drain well. Mix with coconut milk and salt. Place pandan leaves on top. Steam for 30 minutes or until cooked.
  2. 2For the custard layer, whisk together flour, coconut milk, eggs, sugar, pandan extract, and food coloring (if using) until smooth. Strain the mixture to remove any lumps.
  3. 3Pour the custard mixture over the steamed glutinous rice. Steam for another 15-20 minutes, or until the custard is set. Let cool completely before cutting into squares.
