Kuih Seri Muka (Glutinous Rice Cake)

A two-layered dessert with a glutinous rice base and a pandan-flavored custard top. This recipe is completely egg-free.

Ingredients

  • 2 cups Glutinous Rice
  • 1 can Coconut Milk
  • 1/2 tsp Salt
  • 3 leaves Pandan Leaves
  • 1 can Coconut Milk (for topping)
  • 3/4 cup Sugar
  • 1/4 cup Rice Flour
  • 2 drops Green Food Coloring (optional)
  • 2 tbsp Tapioca Starch

Instructions

  1. 1Soak the glutinous rice for at least 2 hours.
  2. 2Steam the rice with coconut milk, salt, and pandan leaves for 30 minutes, or until cooked.
  3. 3Press the rice firmly into a baking dish.
  4. 4In a saucepan, mix coconut milk, sugar, rice flour, tapioca starch and green food coloring (if using).
  5. 5Cook over medium heat, stirring constantly, until the mixture thickens into a custard.
  6. 6Pour the custard over the rice and steam for another 30 minutes, or until the custard is set.
  7. 7Let cool completely before slicing and serving.
