Kuih Koci Pulut Hitam (Black Glutinous Rice Dumplings)

Ingredients

  • 1 cup Black Glutinous Rice Flour
  • 1/2 cup Glutinous Rice Flour
  • 1 cup Coconut Milk
  • 2 leaves Pandan Leaves
  • 1/2 cup Gula Melaka (Palm Sugar)
  • 1 cup Grated Coconut
  • 1/4 tsp Salt
  • 6 pieces Banana Leaves

Instructions

  1. 1In a bowl, combine the 1 cup Black Glutinous Rice Flour with 1/2 cup Coconut Milk. Stir until the flour is fully moistened. Let this mixture sit for 30 minutes.
  2. 2In a small saucepan, combine the 1/2 cup Gula Melaka with 2 tablespoons of water. Heat over medium-low heat (around 250°F / 120°C) until the gula melaka is completely melted and forms a syrup. Add the 1 cup Grated Coconut and the 2 leaves Pandan Leaves to the saucepan. Stir continuously for 3-5 minutes until the mixture thickens slightly and the coconut is coated. Remove and discard the pandan leaves. Set this filling aside.
  3. 3To the bowl with the soaked black glutinous rice flour mixture, add the 1/2 cup Glutinous Rice Flour, the remaining 1/2 cup Coconut Milk, and the 1/4 tsp Salt. Mix everything together until a smooth, pliable dough forms. If the dough feels too sticky, add a tiny bit more glutinous rice flour; if too dry, add a tiny bit more coconut milk.
  4. 4Take a portion of the dough, about the size of a small lime, and flatten it into a small disc in the palm of your hand. Place about 1 teaspoon of the coconut filling in the center of the disc. Carefully fold the dough around the filling and gently shape it into a smooth ball.
  5. 5Prepare your banana leaves by wiping them clean. Take one prepared banana leaf and place a dough ball in the center. Fold the banana leaf around the dough ball to enclose it, creating a neat parcel. You can twist the ends or fold them to secure the dumpling.
  6. 6Arrange the wrapped dumplings in a steamer basket, ensuring they do not touch each other. Place the steamer basket over a pot of boiling water (water should be at 212°F / 100°C). Cover the steamer and steam for 25-30 minutes, or until the dumplings are firm to the touch and cooked through.
