Ingredients

  • 2 cups Glutinous Rice Flour
  • 1 cup Pandan Juice (from 6-8 pandan leaves)
  • 1/4 cup Coconut Milk
  • 1/4 teaspoon Salt
  • 1.5 cups Grated Coconut
  • 1/2 cup Palm Sugar (Gula Melaka), chopped
  • 2 tablespoons Water
  • 6 squares Banana Leaves, cut into squares

Instructions

  1. 1Prepare the filling: In a pan, combine grated coconut, palm sugar, and water. Cook over medium heat until the sugar melts and the mixture thickens. Set aside to cool.
  2. 2Prepare the dough: In a bowl, mix glutinous rice flour, pandan juice, coconut milk, and salt until a smooth dough forms.
  3. 3Assemble the dumplings: Take a small amount of dough and flatten it in your palm. Place a spoonful of the coconut filling in the center. Gently close the dough around the filling to form a ball.
  4. 4Wrap in banana leaves: Place each filled dumpling in the center of a banana leaf square. Fold the leaf to enclose the dumpling completely.
  5. 5Steam: Steam the wrapped dumplings for 20-25 minutes, or until the dough is cooked through.
  6. 6Serve: Let the dumplings cool slightly before serving.
