  • 2 tablespoons Tapioca Starch
  • 1 1/2 cups Coconut Milk
  • 1 teaspoon Pandan Extract
  • 1 Egg
  • 1/4 teaspoon Salt
  • 1 tablespoon Oil (for cooking)
  • 1 1/2 cups Grated Coconut
  • 1/2 cup Palm Sugar (Gula Melaka)
  • 2 tablespoons Water

Instructions

  1. 1Prepare the coconut filling: In a pan, combine grated coconut, palm sugar, and water. Cook over medium heat until the sugar melts and the mixture thickens. Set aside to cool.
  2. 2Make the crepe batter: In a bowl, whisk together all-purpose flour, tapioca starch, coconut milk, pandan extract, egg, and salt until smooth.
  3. 3Cook the crepes: Heat a lightly oiled non-stick pan or skillet over medium heat. Pour a thin layer of batter onto the hot pan, spreading it evenly.
  4. 4Cook until set: Cook for 1-2 minutes, or until the crepe is set and the edges start to lift. Gently flip and cook for another minute.
