Käsespätzle (Cheese Noodles) with Caramelized Onions

Ingredients

  • 3 cups All-purpose flour
  • 1 cup Aquafaba (chickpea brine)
  • 1/2 cup Milk
  • 1 teaspoon Salt
  • 1/4 teaspoon Nutmeg
  • 4 tablespoons Butter
  • 2 Onions, sliced
  • 2 cups Emmental cheese, grated
  • 1 cup Gruyere cheese, grated

Instructions

  1. 1Prepare the Spätzle dough: In a large bowl, combine flour, aquafaba, milk, salt, and nutmeg. Mix until a smooth, thick batter forms. Let rest for 15 minutes.
  2. 2Caramelize the onions: Melt butter in a large skillet over medium heat. Add sliced onions and cook, stirring occasionally, until golden brown and caramelized, about 20-25 minutes.
  3. 3Cook the Spätzle: Bring a large pot of salted water to a boil. Using a Spätzle maker or a slotted spoon, drop small amounts of dough into the boiling water. Cook until the Spätzle float to the surface, about 2-3 minutes.
  4. 4Remove the Spätzle with a slotted spoon and drain well.
  5. 5Assemble the Käsespätzle: In a large bowl, combine cooked Spätzle, caramelized onions, Emmental cheese, and Gruyere cheese. Toss gently to combine.
  6. 6Serve hot.
