Ingredients

  • 2.5 cups All-Purpose Flour
  • 1 cup Cold Butter
  • 6-8 tbsp Ice Water
  • 0.5 tsp Salt
  • 4 medium Pears (ripe but firm)
  • 0.75 cup Sugar
  • 1 tsp Cinnamon
  • 1 tbsp Lemon Juice
  • 2 tbsp Cornstarch

Instructions

  1. 1Prepare the crust: In a large bowl, combine flour and salt. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water until the dough comes together. Wrap and chill for 30 minutes.
  2. 2Prepare the filling: Peel, core, and slice the pears. In a bowl, combine pears, sugar, cinnamon, lemon juice, and cornstarch. Mix well.
  3. 3Roll out half of the dough and place it in a pie dish. Pour the pear filling into the crust.
  4. 4Roll out the remaining dough and create a top crust or strips for a lattice top.
  5. 5Bake in a preheated oven at 375°F (190°C) for 45 minutes, or until the crust is golden brown and the filling is bubbly.
