Kotlety Mielone (Polish Meatballs) with Mashed Cauliflower

Ingredients

  • 1 lb Ground Pork
  • 0.5 lb Ground Beef
  • 0.5 cup Cooked Rice
  • 1 Egg
  • 0.5 Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 tsp Marjoram
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 2 tbsp Olive Oil
  • 1 head Cauliflower, cut into florets
  • 2 tbsp Butter (or Dairy-Free Alternative)
  • 0.25 cup Milk (or Dairy-Free Alternative)

Instructions

  1. 1In a large bowl, combine ground pork, ground beef, cooked rice, egg, onion, garlic, marjoram, salt, and pepper. Mix well.
  2. 2Form the mixture into meatballs about 2 inches in diameter.
  3. 3Heat olive oil in a large skillet over medium heat. Brown the meatballs on all sides.
  4. 4Cover the skillet and cook for 20-25 minutes, or until the meatballs are cooked through.
  5. 5While the meatballs are cooking, steam the cauliflower florets until tender, about 15-20 minutes.
  6. 6In a food processor or with a potato masher, mash the cauliflower with butter and milk until smooth and creamy. Season with salt and pepper.
  7. 7Serve the meatballs with the mashed cauliflower.
