Korean Sweet Potato Latte (Goguma Latte)

Ingredients

  • 1 medium Sweet Potato, peeled and cubed
  • 2 cups Milk (Dairy or Non-Dairy)
  • 1-2 tablespoons Honey or Maple Syrup
  • 1/4 teaspoon Cinnamon (optional)

Instructions

  1. 1Place the 1 medium sweet potato, peeled and cubed, into a medium saucepan. Add enough water to cover the sweet potato cubes. Bring the water to a boil over high heat, then reduce the heat to medium and cover the saucepan. Cook for 10 to 15 minutes, or until the sweet potato cubes are easily pierced with a fork.
  2. 2Carefully drain all the water from the saucepan. Return the cooked sweet potato cubes to the warm saucepan.
  3. 3Add the 2 cups of milk and 1 to 2 tablespoons of honey or maple syrup to the saucepan with the sweet potato. Stir gently to combine.
  4. 4Transfer the mixture from the saucepan to a blender. Blend on high speed for 30 to 60 seconds, or until the mixture is completely smooth and creamy.
  5. 5Pour the blended latte into two mugs. If desired, sprinkle the 1/4 teaspoon of cinnamon over the top of each latte.
  6. 6Serve the Korean sweet potato latte hot.
