Korean Sweet Potato Latte (Goguma Latte)

Ingredients

  • 1/2 cup Sweet Potato, peeled and cubed
  • 1 cup Milk (dairy or non-dairy)
  • 1 tablespoon Honey or Maple Syrup
  • 1/4 teaspoon Cinnamon (optional)

Instructions

  1. 1Place the 1/2 cup of sweet potato cubes into a small saucepan. Add enough water to cover the cubes. Bring the water to a boil over high heat, then reduce the heat to medium-low. Cover the saucepan and let the sweet potato cubes steam or boil for 10 to 15 minutes, or until they are very tender when poked with a fork.
  2. 2Carefully drain all the water from the saucepan. Transfer the tender 1/2 cup of sweet potato cubes to a blender.
  3. 3Add the 1 cup of milk, 1 tablespoon of honey or maple syrup, and the 1/4 teaspoon of cinnamon (if using) to the blender with the sweet potato.
  4. 4Secure the lid on the blender. Blend on high speed for 30 to 60 seconds, or until the mixture is completely smooth and creamy. If the mixture is too thick, you can add a tablespoon more milk at a time and blend again until it reaches your desired consistency.
  5. 5Pour the blended mixture into a mug. Serve the Korean Sweet Potato Latte warm.
