  • 2 large Sweet Potatoes
  • 2 tbsp Avocado Oil
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper
  • 1 tbsp Tapioca Starch
  • 0.5 cup Mayonnaise
  • 1 tbsp Gochujang (Korean Chili Paste)
  • 1 tsp Rice Vinegar
  • 1 tsp Honey

Instructions

  1. 1Preheat your oven to 400°F (200°C). Peel the 2 large Sweet Potatoes, then cut them into uniform 1/4-inch thick by 1/4-inch wide fry shapes.
  2. 2In a large mixing bowl, combine the cut sweet potato fries with 2 tbsp Avocado Oil, 0.5 tsp Salt, 0.25 tsp Black Pepper, and 1 tbsp Tapioca Starch. Toss thoroughly until all the fries are evenly coated.
  3. 3Spread the coated sweet potato fries in a single layer on a large baking sheet, ensuring no fries overlap to promote even crisping.
  4. 4Bake the fries in the preheated oven for 20-25 minutes. After 10-12 minutes, carefully remove the baking sheet and use tongs or a spatula to flip each fry, then return to the oven to finish baking until golden brown and crispy.
  5. 5While the fries are baking, prepare the spicy mayo. In a small bowl, whisk together the 0.5 cup Mayonnaise, 1 tbsp Gochujang (Korean Chili Paste), 1 tsp Rice Vinegar, and 1 tsp Honey until smooth and well combined.
  6. 6Once the sweet potato fries are golden brown and crispy, remove them from the oven. Serve the hot fries immediately with the prepared spicy mayo on the side for dipping.
