Ingredients

  • 1 cup Short-grain rice
  • 6 cups Water
  • 1 lb Chicken breast
  • 2 cloves Garlic
  • 2 stalks Green onion
  • 1 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 cup Dairy-free kimchi

Instructions

  1. 1Thoroughly rinse the 1 cup of short-grain rice under cold running water until the water runs clear. Drain the rice well.
  2. 2In a large heavy-bottomed pot, combine the rinsed 1 cup of short-grain rice and 6 cups of water. Bring the mixture to a rolling boil over high heat, then immediately reduce the heat to low. Cover the pot and let it simmer for 30 minutes, stirring occasionally to prevent the rice from sticking to the bottom of the pot.
  3. 3While the rice is simmering, place the 1 lb of chicken breast in a separate medium saucepan. Add enough water to cover the chicken. Bring the water to a simmer over medium-high heat (190°F / 88°C). Poach the chicken for 12-15 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear. Remove the chicken from the water and let it cool slightly on a cutting board. Once cool enough to handle, shred the chicken into bite-sized pieces using two forks.
  4. 4Finely mince the 2 cloves of garlic. Thinly slice the 2 stalks of green onion, separating the white and light green parts from the dark green tops.
  5. 5After the rice has simmered for 30 minutes, add the shredded 1 lb of chicken breast, the minced 2 cloves of garlic, 1 tbsp of soy sauce, 1 tsp of sesame oil, 1/2 tsp of salt, and 1/4 tsp of black pepper to the pot with the rice. Stir everything together thoroughly to combine.
  6. 6Continue to simmer the porridge, uncovered, for another 15 minutes over low heat. Stir frequently to ensure the porridge does not stick and reaches your desired thick and creamy consistency. The porridge is ready when it is thick and the rice grains are very soft.
  7. 7Serve the Korean rice porridge hot. Garnish each serving with the reserved dark green tops of the sliced 2 stalks of green onion. Serve with the 1 cup of dairy-free kimchi on the side.
