Ingredients

  • 8 oz Sweet potato starch noodles (glass noodles)
  • 1/2 lb Beef sirloin, thinly sliced
  • 2 tbsp Coconut aminos
  • 1 tbsp Brown sugar
  • 2 tbsp Sesame oil
  • 2 cloves Garlic, minced
  • 1/2 medium Onion, thinly sliced
  • 1 cup Carrots, julienned
  • 2 cups Spinach
  • 1 cup Mushrooms, sliced
  • 1/2 medium Red bell pepper, julienned
  • 1/4 tsp Ground black pepper

Instructions

  1. 1Place the 8 oz of sweet potato starch noodles in a large bowl and cover with warm water. Let them soak for about 20 minutes, or until they are soft and pliable. Once softened, drain the noodles thoroughly and set them aside.
  2. 2In a medium bowl, combine the 1/2 lb of beef sirloin, 2 tbsp of coconut aminos, 1 tbsp of brown sugar, 1 minced clove of garlic, and 1/4 tsp of ground black pepper. Stir everything together to coat the beef evenly. Let this mixture marinate for 15 minutes.
  3. 3Heat 1 tbsp of sesame oil in a large skillet or wok over medium-high heat (400°F / 205°C). Add the marinated beef to the hot skillet. Cook the beef, stirring occasionally, for about 5 minutes, or until it is browned and cooked through. The beef should reach an internal temperature of 160°F (71°C). Once cooked, remove the beef from the skillet and place it on a plate, setting it aside.
  4. 4Add the remaining 1 tbsp of sesame oil to the same skillet. Increase the heat to high (450°F / 230°C). Add the 1/2 medium onion, 1 cup of carrots, 1 cup of mushrooms, and 1/2 medium red bell pepper to the skillet. Stir-fry these vegetables for 5 to 7 minutes, until they are tender-crisp, meaning they have softened slightly but still have a slight bite. Add the 2 cups of spinach to the skillet and cook for 1 minute more, just until it wilts.
  5. 5Return the cooked beef and the drained noodles to the skillet with the vegetables. Use tongs or two large spoons to toss everything together gently, ensuring the noodles, beef, and vegetables are well combined.
  6. 6Continue to cook the mixture in the skillet for another 2 to 3 minutes over medium-high heat (400°F / 205°C), tossing occasionally. This will ensure everything is heated through evenly. Serve immediately.
