Ingredients

  • 2 medium Sweet Potatoes
  • 2 cups Vegetable Oil
  • 0.5 cup Sugar
  • 2 tbsp Water
  • 1 tbsp Sesame Seeds

Instructions

  1. 1Peel and cut sweet potatoes into 1-inch cubes.
  2. 2Heat vegetable oil in a deep pot or fryer to 325°F (160°C).
  3. 3Fry the sweet potato cubes in batches until golden brown and cooked through, about 5-7 minutes per batch.
  4. 4Remove the sweet potatoes from the oil and drain on paper towels.
  5. 5In a separate pan, combine sugar and water over medium heat.
  6. 6Cook until the sugar dissolves and forms a light caramel, about 3-5 minutes.
  7. 7Add the fried sweet potatoes to the caramel and toss to coat evenly.
  8. 8Transfer the coated sweet potatoes to a plate lined with parchment paper and sprinkle with sesame seeds.
  9. 9Let cool slightly before serving.
