Ingredients

  • 2 lbs Potatoes
  • 1 cup All-Purpose Flour
  • 1 large Egg
  • 1 tsp Salt
  • 4 tbsp Plant-Based Butter
  • 2 tbsp Fresh Herbs (parsley, dill)

Instructions

  1. 1Boil the potatoes until tender. Drain and let cool slightly.
  2. 2Peel the potatoes and mash them thoroughly. Allow to cool completely.
  3. 3In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms.
  4. 4On a lightly floured surface, roll the dough into a long rope about 1 inch thick.
  5. 5Cut the rope into 1-inch pieces.
  6. 6Bring a large pot of salted water to a boil. Gently drop the kopytka into the boiling water, a few at a time. Cook for 3-5 minutes, or until they float to the surface.
  7. 7Remove the kopytka with a slotted spoon and drain well.
  8. 8In a skillet, melt plant-based butter over medium heat until lightly browned. Add the fresh herbs and cook for 1 minute.
  9. 9Pour the dairy-free brown butter over the kopytka and serve immediately.
