  • 1 cup Chickpea Flour
  • 1/2 cup Plant-Based Milk (Almond or Soy)
  • 1 teaspoon Baking Powder
  • 1 cup Fresh Parsley (chopped)
  • 1 cup Fresh Cilantro (chopped)
  • 1/2 cup Fresh Dill (chopped)
  • 1/2 cup Spinach (chopped)
  • 1/2 cup Onion (chopped)
  • 2 cloves Garlic (minced)
  • 1/2 teaspoon Turmeric
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 2 tablespoons Olive Oil

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2In a large bowl, whisk together chickpea flour, plant-based milk, and baking powder.
  3. 3Add parsley, cilantro, dill, spinach, onion, garlic, turmeric, salt, and pepper. Mix well.
  4. 4Heat olive oil in an oven-safe skillet over medium heat.
  5. 5Pour the herb mixture into the skillet and cook for 5 minutes.
  6. 6Transfer the skillet to the preheated oven and bake for 20 minutes, or until the frittata is set and golden brown.
