Ingredients

  • 1 cup Pearl Barley
  • 2 cups Water
  • 1/2 teaspoon Salt
  • 1 tablespoon Niter Kibbeh (Spiced Clarified Butter) - optional

Instructions

  1. 1Rinse the pearl barley (or buckwheat groats) and drain well.
  2. 2Heat a dry skillet or heavy-bottomed pan over medium heat.
  3. 3Add the barley/groats to the skillet and toast, stirring frequently, until golden brown and fragrant, about 10-15 minutes. Be careful not to burn it.
  4. 4Remove from heat and let cool slightly.
  5. 5In a saucepan, bring water and salt to a boil. Add the toasted barley/groats and simmer until the water is absorbed, about 15-20 minutes.
  6. 6Stir in Niter Kibbeh (or olive oil) if desired, for added flavor.
  7. 7Serve warm or at room temperature.
