Ingredients

  • 2 large Kūmara (sweet potato), peeled and diced
  • 1 can (400ml) Coconut milk
  • 4 cups Vegetable broth
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 2 tablespoons Lime juice
  • 1/4 cup Coriander, chopped
  • 1 tablespoon Olive oil
  • to taste Salt and pepper

Instructions

  1. 1Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger and cook until softened.
  2. 2Add kūmara and vegetable broth. Bring to a boil, then reduce heat and simmer until kūmara is tender.
  3. 3Use an immersion blender to blend the soup until smooth.
  4. 4Stir in coconut milk and lime juice. Heat through.
  5. 5Season with salt and pepper. Garnish with fresh coriander.
