Ingredients

  • 1.5 cups Kūmara (sweet potato), cooked and mashed
  • 0.5 cup Coconut Milk
  • 0.25 cup Tapioca Flour
  • 0.25 cup Coconut Flakes (unsweetened)
  • 0.125 tsp Salt

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2In a medium-sized mixing bowl, combine the 1.5 cups of cooked and mashed kūmara, the 0.5 cup of coconut milk, the 0.25 cup of tapioca flour, the 0.25 cup of unsweetened coconut flakes, and the 0.125 teaspoon of salt.
  3. 3Stir all the ingredients together thoroughly until the mixture is smooth and well combined.
  4. 4Line a baking sheet with parchment paper. Using a spoon, drop spoonfuls of the kūmara mixture onto the prepared baking sheet, leaving a small space between each bite.
  5. 5Bake the kūmara bites in the preheated oven for 15 to 20 minutes, or until their edges are lightly golden brown and they feel firm to the touch.
  6. 6Carefully remove the baking sheet from the oven and let the kūmara bites cool completely on the sheet before serving. This allows them to firm up further.
