Klepon (Sweet Rice Balls)

Ingredients

  • 200 g Glutinous rice flour
  • 2 tbsp Tapioca flour
  • 1 tsp Pandan extract
  • 150 ml Warm water
  • 80 g Palm sugar
  • 1 cup Grated coconut
  • 1/4 tsp Salt

Instructions

  1. 1In a bowl, mix glutinous rice flour and tapioca flour.
  2. 2Add pandan extract and gradually add warm water, stirring until a smooth and pliable dough forms.
  3. 3Pinch off small pieces of dough and flatten them in your palm.
  4. 4Place a small cube of palm sugar in the center of each dough piece.
  5. 5Fold the dough around the palm sugar and roll into a ball.
  6. 6Bring a pot of water to a boil.
  7. 7Drop the rice balls into the boiling water and cook until they float to the surface.
  8. 8Remove the rice balls with a slotted spoon and drain well.
  9. 9In a separate bowl, mix grated coconut with salt.
  10. 10Roll the cooked rice balls in the grated coconut to coat evenly. Serve immediately.
