Klepon (Pandan Glutinous Rice Balls)

Small balls of glutinous rice flour filled with liquid palm sugar and coated in grated coconut. A burst of sweetness in every bite.

Ingredients

  • 200 g Glutinous Rice Flour
  • 1 tsp Pandan Extract
  • 150 ml Warm Water
  • 100 g Palm Sugar (Gula Melaka)
  • 100 g Grated Coconut
  • 0.25 tsp Salt

Instructions

  1. 1In a bowl, combine glutinous rice flour and pandan extract.
  2. 2Gradually add warm water, mixing until you form a smooth, pliable dough.
  3. 3Cut palm sugar into small pieces. Set aside.
  4. 4Bring a pot of water to a boil.
  5. 5Take a small portion of the dough and flatten it in your palm. Place a piece of palm sugar in the center.
  6. 6Carefully wrap the dough around the sugar, ensuring it is completely sealed. Roll into a smooth ball.
  7. 7Repeat steps 5-6 with the remaining dough and sugar.
  8. 8Gently drop the balls into the boiling water. Cook until they float to the surface, about 5 minutes.
  9. 9Remove the cooked balls from the water and immediately roll them in grated coconut mixed with a pinch of salt.
  10. 10Let cool slightly before serving.
