Ingredients

  • 1 cup Glutinous Rice Flour
  • 2 tbsp Tapioca Flour
  • 1 tsp Pandan Extract
  • 2 drops Green Food Coloring (optional)
  • 1/2 cup Water
  • 1/2 cup Palm Sugar (cut into small cubes)
  • 1 cup Grated Coconut
  • 1/4 tsp Salt

Instructions

  1. 1In a bowl, combine glutinous rice flour and tapioca flour. Add pandan extract, green food coloring (if using), and water. Mix until a smooth, pliable dough forms.
  2. 2Bring a pot of water to a boil.
  3. 3Take a small amount of dough and flatten it. Place a small cube of palm sugar in the center.
  4. 4Carefully enclose the palm sugar with the dough and roll it into a ball.
  5. 5Drop the rice balls into the boiling water. Cook until they float to the surface, then cook for another 2 minutes.
  6. 6Remove the rice balls and drain well.
  7. 7In a separate bowl, mix grated coconut with a pinch of salt. Roll the rice balls in the grated coconut to coat.
  8. 8Serve immediately.
