Ingredients

  • 2 cups Basmati Rice
  • 2 cups Coconut Milk
  • 1 cup Water
  • 1 teaspoon Salt
  • 1 medium Red Onion
  • 2 small Green Chilies
  • 1 tablespoon Lime Juice
  • 1/2 teaspoon Salt

Instructions

  1. 1Rinse the rice until the water runs clear.
  2. 2In a pot, combine the rice, coconut milk, water, and salt. Bring to a boil, then reduce heat and simmer covered for 20 minutes, or until the rice is cooked and the liquid is absorbed.
  3. 3While the rice is cooking, finely chop the red onion and green chilies.
  4. 4In a small bowl, combine the chopped red onion, green chilies, lime juice, and salt. Mix well.
  5. 5Once the rice is cooked, fluff with a fork and let it cool slightly.
  6. 6Serve the kiri bath warm or at room temperature with a spoonful of lunu miris.
