Kiri Bath (Milk Rice) with Lunu Miris (Soy-Free)

Traditional Sri Lankan milk rice, cooked in coconut milk and served with a spicy onion and chili relish (lunu miris).

Ingredients

  • 1 cup White Rice (short grain)
  • 2 cups Coconut Milk
  • 1 cup Water
  • 1/2 tsp Salt
  • 1 medium Red Onion, chopped
  • 2 small Green Chilies, chopped
  • 1 tbsp Lime Juice
  • 1/4 tsp Salt

Instructions

  1. 1Place the 1 cup White Rice (short grain) in a fine-mesh sieve and rinse it under cold running water until the water runs clear. Drain well.
  2. 2In a large, heavy-bottomed pot, combine the rinsed 1 cup White Rice (short grain), 2 cups Coconut Milk, 1 cup Water, and 1/2 tsp Salt. Stir to combine.
  3. 3Place the pot over medium-high heat and bring the mixture to a rolling boil. Once boiling, immediately reduce the heat to low, cover the pot tightly with a lid, and let it simmer for 20-25 minutes. The rice is cooked when it is tender and all the liquid has been absorbed.
  4. 4While the rice is simmering, prepare the Lunu Miris. In a medium bowl, combine the 1 medium Red Onion (chopped), 2 small Green Chilies (chopped), 1 tbsp Lime Juice, and 1/4 tsp Salt. Mix everything together thoroughly.
  5. 5Once the rice is cooked, remove the pot from the heat. Let it stand, covered, for 5 minutes to allow the rice to steam and finish cooking.
  6. 6Serve the Kiri Bath warm with a generous portion of the prepared Lunu Miris on the side.
