Kinche (Cracked Wheat Porridge)

Ingredients

  • 1 cup Cracked wheat
  • 3 cups Water
  • 2 tbsp Ethiopian spiced clarified butter (Niter Kibbeh)
  • 0.5 tsp Salt

Instructions

  1. 1Place the 1 cup of cracked wheat in a fine-mesh sieve and rinse it under cold running water until the water runs clear. Drain well.
  2. 2In a large heavy-bottomed pot, bring the 3 cups of water to a rolling boil over high heat. This should take about 5-7 minutes.
  3. 3Carefully add the rinsed 1 cup of cracked wheat and the 0.5 tsp of salt to the boiling water. Stir to combine.
  4. 4Immediately reduce the heat to low, cover the pot tightly with a lid, and let it simmer for 25 to 30 minutes. Stir occasionally to prevent sticking.
  5. 5The cracked wheat is tender and the porridge has thickened when it has a creamy consistency, similar to oatmeal. You should no longer see distinct grains of wheat, and the mixture will coat the back of a spoon.
  6. 6Remove the pot from the heat. Stir in the 2 tbsp of Ethiopian spiced clarified butter (Niter Kibbeh) until it is fully melted and incorporated into the porridge.
  7. 7Serve the Kinche hot immediately.
