Khoresh Gheimeh (Persian Stew - Egg-Free)

A flavorful Persian stew with beef, split peas, and dried limes, served with rice. This version is adapted to be egg-free.

Ingredients

  • 1 lb Beef stew meat
  • 1 cup Yellow split peas
  • 1 large Onion
  • 2 tbsp Tomato paste
  • 3 whole Dried limes (limoo amani)
  • 1 tsp Turmeric
  • 1/4 tsp Saffron threads
  • 1 tbsp Rose water
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 4 cups Water
  • 2 cups Rice

Instructions

  1. 1Soak yellow split peas for at least 30 minutes. Pierce dried limes with a fork.
  2. 2Heat olive oil in a large pot over medium heat. Brown the beef stew meat on all sides.
  3. 3Remove the beef and set aside. In the same pot, sauté the chopped onion until softened.
  4. 4Add tomato paste, turmeric, salt, and pepper. Stir and cook for a few minutes.
  5. 5Add the beef back to the pot, along with the drained split peas, dried limes, and 4 cups of water.
  6. 6Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 hours, or until the beef and split peas are tender.
  7. 7In the last 15 minutes of cooking, add saffron threads and rose water.
  8. 8Serve hot with cooked rice.
