Ingredients

  • 2 medium Eggplant (Japanese or Chinese)
  • 2 tablespoons Tomato Paste
  • 0.5 medium Onion (grated)
  • 2 cloves Garlic (minced)
  • 1 teaspoon Turmeric
  • 0.5 teaspoon Cumin
  • 3 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 2 tablespoons Fresh Mint (chopped)

Instructions

  1. 1Cut the eggplant into 1-inch cubes.
  2. 2In a bowl, whisk together the tomato paste, grated onion, minced garlic, turmeric, cumin, olive oil, lemon juice, salt, and pepper.
  3. 3Add the eggplant cubes to the marinade and toss to coat well. Let marinate for at least 15 minutes.
