Ingredients

  • 2 large Sweet potatoes
  • 0.5 cup Rice flour
  • 0.25 cup Tapioca starch
  • 1 tablespoon Sugar
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Baking powder
  • 0.5 cup Water
  • 2 cups Vegetable oil

Instructions

  1. 1Peel the 2 large sweet potatoes and cut them into thin sticks, about 1/4-inch thick.
  2. 2In a medium bowl, whisk together the 0.5 cup rice flour, 0.25 cup tapioca starch, 1 tablespoon sugar, 0.5 teaspoon salt, and 0.5 teaspoon baking powder until well combined.
  3. 3Gradually add the 0.5 cup water to the dry ingredients, mixing continuously with the whisk until you have a smooth batter with no lumps.
  4. 4Pour the 2 cups of vegetable oil into a large, heavy-bottomed pot or Dutch oven. Heat the oil over medium-high heat until it reaches 350°F (175°C).
  5. 5Dip each sweet potato stick into the batter, making sure it is fully coated, and let any excess batter drip off.
  6. 6Carefully place the battered sweet potato sticks into the hot oil, frying in batches to avoid crowding the pot. Fry for 5 to 7 minutes, or until the sticks are golden brown and appear crispy.
