Ingredients

  • 2 medium Zucchini, grated
  • 1/2 cup Almond flour
  • 1/4 cup Grated Parmesan cheese
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • to taste Salt and pepper
  • 2 tbsp Olive oil

Instructions

  1. 1Grate the 2 medium zucchini. Place the grated zucchini in the center of a clean kitchen towel and twist the towel to squeeze out as much excess moisture as possible.
  2. 2In a medium bowl, combine the squeezed grated zucchini, 1/2 cup almond flour, 1/4 cup grated Parmesan cheese, 1/2 tsp garlic powder, and 1/2 tsp onion powder. Season with salt and pepper to your taste. Stir everything together until it is well combined.
  3. 3Heat 2 tbsp olive oil in a 10-inch non-stick skillet over medium heat, which is about 350°F (175°C).
  4. 4Once the oil is shimmering, carefully drop rounded tablespoons of the zucchini mixture into the hot skillet. Gently flatten each spoonful with the back of your spoon to form small patties.
  5. 5Cook the fritters for 3 to 4 minutes on each side. They are done when they are golden brown and appear cooked through.
  6. 6Remove the fritters from the skillet and serve them immediately.
