Ingredients

  • 1 lb Ground Pork
  • 2 tablespoons Soy Sauce (Tamari for Gluten-Free)
  • 1 tablespoon Fish Sauce (Nuoc Mam)
  • 3 cloves Minced Garlic
  • 1 teaspoon Ginger
  • 1 tablespoon Swerve (or other keto sweetener)
  • 1/2 teaspoon Black Pepper
  • 1/4 cup Green Onions

Instructions

  1. 1In a large mixing bowl, add the 1 lb of ground pork, 2 tablespoons of tamari, 1 tablespoon of fish sauce, 3 cloves of minced garlic, 1 teaspoon of ginger, 1 tablespoon of Swerve (or other keto sweetener), 1/2 teaspoon of black pepper, and 1/4 cup of green onions. Use your hands to thoroughly mix all ingredients until uniformly combined, about 2-3 minutes.
  2. 2Divide the mixture and roll it into approximately 16-20 small meatballs, each about 1 to 1.5 inches (2.5-3.8 cm) in diameter.
  3. 3Carefully thread 3-4 meatballs onto each skewer, ensuring they are securely placed but not overly compressed.
  4. 4Preheat your oven to 400°F (200°C). Arrange the skewers in a single layer on a baking sheet. Bake for 15-20 minutes, or until the meatballs are browned on the outside and cooked through, reaching an internal temperature of 160°F (71°C) when measured with a meat thermometer.
  5. 5Serve the skewers immediately, perhaps alongside a simple green salad for a complete meal.
