Ingredients

  • 1 lb Chicken breast
  • 8 cups Shredded lettuce
  • 1 medium Cucumber
  • 1 large Carrot
  • 1/4 cup Mint leaves
  • 1/4 cup Cilantro
  • 1/4 cup Almond butter
  • 2 tbsp Soy sauce (or tamari)
  • 1 tbsp Rice vinegar
  • 1 tsp Sesame oil
  • 1 tsp Ginger
  • 1 clove Garlic
  • 1/2 tsp Sriracha

Instructions

  1. 1Cook chicken breast and shred. Alternatively use rotisserie chicken.
  2. 2Prepare the vegetables: shred the lettuce, julienne the cucumber and carrot. Chop mint and cilantro.
  3. 3Make the almond butter sauce: whisk together almond butter, soy sauce, rice vinegar, sesame oil, ginger, garlic and sriracha.
  4. 4Assemble the rolls: lay out lettuce leaves, fill with chicken, cucumber, carrot, mint, and cilantro.
  5. 5Serve immediately with almond butter sauce.
