Filipino shrimp and vegetable fritters, made keto friendly with almond flour instead of wheat flour. Served with vinegar dipping sauce.

Ingredients

  • 1 lb Shrimp
  • 1/2 cup Almond flour
  • 2 Eggs
  • 1 cup Green papaya
  • 1 cup Carrot
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 2 cups Coconut oil
  • 1/4 cup Apple cider vinegar
  • 1 tbsp Coconut aminos
  • 1/2 tsp Chili flakes

Instructions

  1. 1In a bowl, combine shrimp, almond flour, eggs, shredded green papaya, shredded carrot, diced onion, minced garlic, salt, and pepper.
  2. 2Heat coconut oil in a large skillet over medium heat.
  3. 3Spoon the shrimp and vegetable mixture into the hot oil, forming small fritters.
  4. 4Fry for 3-4 minutes per side, or until golden brown and crispy.
  5. 5Remove from oil and drain on paper towels.
  6. 6For the dipping sauce, combine apple cider vinegar, coconut aminos, and chili flakes.
  7. 7Serve the fritters hot with the dipping sauce.
