Ingredients

  • 4 6-oz Salmon fillets
  • 2 tablespoons Olive oil
  • 3 cloves Garlic
  • 1/2 cup Sun-dried tomatoes (oil-packed)
  • 1/2 cup Chicken broth
  • 1/2 cup Coconut cream
  • 8 cups Spinach
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/4 teaspoon Red pepper flakes

Instructions

  1. 1Heat olive oil in a large skillet over medium heat.
  2. 2Add garlic and sun-dried tomatoes and cook for 2 minutes until fragrant.
  3. 3Pour in chicken broth and coconut cream. Season with salt, pepper, and red pepper flakes. Bring to a simmer.
