Ingredients

  • 4 6oz Salmon Fillets
  • 2 tbsp Coconut Oil
  • 2 tbsp Red Curry Paste
  • 1 can Coconut Milk (full-fat)
  • 1 tbsp Tahini
  • 1 tsp Fish Sauce (optional)
  • 1 tbsp Lime Juice
  • 4 cups Cauliflower Rice
  • 0.5 tsp Soy Sauce
  • 1/4 cup Chopped Cilantro

Instructions

  1. 1Heat coconut oil in a large skillet over medium-high heat.
  2. 2Season salmon fillets with salt and pepper. Sear for 4-5 minutes per side, or until cooked through.
  3. 3Remove salmon from the skillet and set aside.
  4. 4Add red curry paste to the skillet and cook for 1 minute until fragrant.
  5. 5Pour in coconut milk and tahini. Bring to a simmer.
  6. 6Add fish sauce (optional) and lime juice. Stir well.
  7. 7In a separate pan, sauté cauliflower rice with soy sauce until tender.
  8. 8Serve salmon over cauliflower rice and drizzle with red curry sauce. Garnish with cilantro.
