Keto Thai Noodle Salad with Pork (Larb Moo)

A flavorful and spicy Thai pork salad made with ground pork, herbs, and a zesty lime dressing, served over shirataki noodles.

Ingredients

  • 1 lb Ground pork
  • 8 oz Shirataki noodles
  • 3 tbsp Lime juice
  • 2 tbsp Fish sauce
  • 1 tbsp Coconut aminos
  • 1/4 medium Red onion
  • 1/4 cup Mint leaves
  • 1/4 cup Cilantro
  • 1 tbsp Toasted sesame seeds
  • 1/2 tsp Red pepper flakes

Instructions

  1. 1Place 1 lb of ground pork in a 10-inch skillet over medium-high heat (190°C / 375°F) and cook for 8-10 minutes, breaking it up with a spoon, until it is no longer pink and the internal temperature reaches 160°F (71°C). Drain any excess fat from the skillet.
  2. 2Prepare the 8 oz of shirataki noodles by rinsing them thoroughly under cold water, then boiling them in a pot of water for 2 minutes to remove any odor. Drain the noodles well.
  3. 3Add the cooked ground pork and the drained shirataki noodles to a large bowl. Add the 1/4 medium red onion, cut into thin slices, 1/4 cup of mint leaves, and 1/4 cup of cilantro, roughly chopped.
  4. 4In a separate small bowl, whisk together 3 tbsp of lime juice, 2 tbsp of fish sauce, and 1 tbsp of coconut aminos.
  5. 5Add 1/2 tsp of red pepper flakes to the small bowl with the lime juice mixture and whisk again to combine the dressing.
  6. 6Pour the prepared dressing over the ingredients in the large bowl and toss gently to coat everything evenly.
  7. 7Garnish the salad with 1 tbsp of toasted sesame seeds just before serving.
