Ingredients

  • 1.5 lbs Chicken Thighs
  • 2 tbsp Coconut Oil
  • 2 tbsp Green Curry Paste
  • 2 cans Coconut Milk (full-fat)
  • 2 tbsp Sunflower Seed Butter
  • 1 tbsp Fish Sauce (optional)
  • 2 tbsp Lime Juice
  • 1 tbsp Swerve (or other keto sweetener)
  • 4 cups Zucchini Noodles
  • 1 medium Red Bell Pepper
  • 1/4 cup Fresh Cilantro

Instructions

  1. 1Heat coconut oil in a large skillet or wok over medium-high heat.
  2. 2Add chicken thighs and cook until browned on all sides and cooked through.
  3. 3Stir in green curry paste and cook for 1 minute until fragrant.
  4. 4Pour in coconut milk and sunflower seed butter. Bring to a simmer.
